SOFTNESS SOUP OF WILD MUSHROOMS

INGREDIENTS FOR SERVES 4
 
  •   100 g of smoked bacon
  •   200 g of slivers mushrooms
  •   1/2 l. of olive oil
  •   1 Chopped onion
  •   2 Cloves of chopped garlic
  •   400 g of potatoes in cube
  •   1,2 l of broth chicken
  •   1 Stalk of fresh chopped parsley
  •   1/2 l. if cream
  •   Salt and pepper
           
      •          Fry the bacon with some mushrooms in olive oil. Drain them.
       
      • 2     In the same fat, make sweat the garlic, the onion, the dices of potato and the rest of mushrooms. Make slightly gild the whole.
       
      • 3     Put the warm broth and cook during 20 minutes. Add the parsley and pass in the mixer. Salt and pepper.
       
      • 4     Draw up the soup in the plates. Incorporate a little bit of cream, and add bacon and mushrooms.
                          To finish... For a better visual effect, replace the bacon by fine slices of fried bacon.
